Symphonia Quintus 2016 2015 Make your own selection ofThe wine is a carefully structured blend, crafted to respect the individual characters of each variety and to capture their harmony when in concert. The winemaking process saw the Saperavi, Tannat and Tempranillo harvested and fermented as one parcel in a small open fermenter. These varieties contain a great deal of tannin and flavours in their skins so during the fermentation period our attention was focused on achieving the right level of extraction
